Tori Dasu

Tori Dasu is a sushi and sake concept out of Guildhall Restaurant in Glencoe, Illinois. Created during COVID-19, Tori Dasu provided North Shore residents with sushi closer to home and more variety, and gave the restaurant a new revenue stream. I created not only the branding and identity, but the name as well. Tori Dasu means ‘to take out,’ in Japanese. While originally meant to only be a 1-2 month pop-up, Tori Dasu has had immense success and remains open today, with plans for its own space.

The samurai artwork was sourced from artist Kumi Shire in Italy.
